A trivial solution to changing oil pan plug gaskets or adding oil temperature sensors when you have oil in the pan is to put a shop vacuum on the valve cover breather and turn it on.

You can take the drain plug out and do whatever you want. The vacuum pulls air in through the hole you just made.
You won’t spill a drop of oil.

An old trick I have used several time and it works just peachy.
