Prep is 90% of the job,

You could give him the car and divide the costs
of

1) Prep/Disassembly
2) Moving to Paint
3) Paint / Materials
4) Moving back to his place
5) Reassembly

and see how it goes along the way, you could always pull it
and pay for work done thus far.

I'd also want to see a schedule with completion dates.

after I saw examples of his work and talk to others who have used him.
